This evening we decided to make pasta alla chitarra (in this case with spinach mixed into the pasta dough). We had this with a traditional tomato sauce plus some speck to give it extra body/flavor. The picture shows the pasta just before we pulled it out of the water, strained it, added the sauce and sprinkled with parmesan. The Italian word ‘chitarra‘ is in reference to the guitar-like instrument used to uniformly cut the pasta.
